The delicate nature of fresh white fish is combined with a simple white sauce then baked with a layer of cheese on top. Best for all occasions. Happy Cooking :)
Ingredients:
2 cups fresh milk
1 bay leaf
1 med onion
60g butter
1 finely chop onion
1/4 cup flour
3 white fish
1/3 cup all purpose cream
1/2 cup grated cheddar cheese
1/2 cup extra grated cheese (for topping)
Salt and Pepper to taste
Procedure:
1. Preheat oven at 180 degrees.
2. Bring a large saucepan of lightly salted water to a boil. Add fish fillets and cook for 4 to 6 minutes; drain.
3. In a sauce pan heat milk, bay leaf and slice onion, bring to boil. Remove from heat, cover and stand to infuse for 15minutes then strain and reserve milk.
4. In a pan, melt the butter, add finely chop onion stir for 10 minutes or until onion is soft.
5. Add flour and stir for 1 minute or until mixture is bubbly, add milk gradually, stir constantly over low heat until boils and get thickened.
6. Simmer over low heat for 5 minutes, add 1/2 cup of grated cheese, simmer.
7. Remove from heat, add boiled fish, salt and pepper, stir to combine.
8. Spoon mixture into a baking dish and sprinkle top with the remaining 1/2 cup of grated cheese.
9. Bake 25 minutes or until golden brown.
